For the first time in three weeks, I actually had free time on Saturday to do something I enjoy.

So I decided to challenge my baking prowess by making a batch of red velvet cupcakes. I’ve always been fascinated with red velvet and it appears I’m not alone.

They’re not as easy to whip up as other popular recipes. But when you’ve got that perfect combination of buttermilk, bordering-on-illegal amounts of red food colouring, and tangy cream cheese frosting, they’re unlike any other.

My friends seemed to enjoy my first attempt at this blood red mini-cake. I’ll be taking the remaining batch into the office tomorrow for more testing.
