As much as I love to bake or cook, I don’t have a whole lot of time for either activity these days. Thankfully, Sabrina Cristobal-Go, the wonder woman being the blog www.sinfullysabrina.com has offered to be my site’s food partner. This means that you get to hear some of her wonderful recipes right here on the site! Here’s this weekend’s recipe for hearty Banana Bread Oat Cookies, a perfect healthy snack for young children:
Banana Bread Oat Cookies (Yield 8 cookies)
Ingredients
1 medium banana, mashed
1 cup rolled oats 1 cup walnuts, roughly chopped
1 Tbsp. coconut oil
2 Tbsp. raw honey
1/4 tsp. cinnamon
ground Pinch of salt
Instructions
• Preheat oven to 350 degrees farenheit.
• Place the mashed banana, rolled oats, coconut oil, honey, walnuts, cinnamon and salt in a bowl.
• Mix thoroughly and leave for 10-15 minutes.
• In a baking pan lined with parchment paper, use an ice cream scooper to portion out the oat mixture. Drop on lined baking pans and flatten a little.
• Bake in the oven for 15-18 mins.
• Let cool and serve.
