Lunches and dinners were always considered family time when I lived in the Philippines.

Oftentimes, my parents, brother, and I would stay till way after the plates were cleared to just laugh and catch up on each other’s lives. I miss them more often than my mind wants to admit sometimes.

This is a simple recipe that has been part of my family’s menu for as long as I can remember. It’s a good-for-you green pepper stuffed with a cheesy ground beef + rice mixture and topped with buttered breadcrumbs or cheese (or both).

Here is the recipe. Scanned and emailed to me with love by Nisa, our cook who has been part of my family for over 20 years.  Please note some changes below.

1. Nisa always adds around 3 big spoonfuls of tomato paste to the rice+meat mixture. I do the same.

2. She also likes to serve it with a rich tomato sauce made my thickening 1 can of diced tomatoes + 1 diced onion + a few ‘glugs’ of olive oil + and a beef stock cube (no msg) in a pot for about 30 minutes.

3. I also like serving it with tzatziki (like in my picture above) to give it more of a Middle Eastern taste.
