Parmesan & Herb Shortbread

A quick and easy savory biscuit to make for a picnic or cocktail party. My officemate brought some to my baby shower and they were a hit!

Feel free to play with the herbs and spices used.

Ingredients:

* 400 grams of plain flour (3 cups and 3 tbs.)
* 2 tsps. salt
* 70 – 100 grams of parmesan cheese
* 3 tbs. dried herbs
* 2 egg yolks
* 8 tbs. of cold water
* freshly ground pepper
* whatever spices you fancy (paprika, cayenne pepper, etc.)
*200 grams cold butter cut into squares

Pre-heat oven to 170 degrees celsius

Put all ingredients in a food processor. Mix till everything is mushed together but still a bit floury.

Put dough on a floured surface and roll till 1/2 cm thick. Use a cookie cutter to make shapes.

Brush with whipped egg white and sprinkle sesame seeds, parmesan cheese, or some spices

Bake for 20 minutes or until golden brown on top.
