Cooking: Blue Cheese Roast Chicken

I tried this recipe at a friend’s place in Makati a few years ago and loved it. I would have never thought of pairing blue cheese with roasted poultry but they go together quite well.

It’s actually easy and if you’ve roasted a chicken before you will have no problem getting that perfect combination of moist meat, garlic potatoes, and melted blue cheese.

I’d take a picture of the dish, but as soon as it’s out of oven it gets wiped out by hungry friends.

Ingredients:

1 whole chicken

1/3 cup olive oil

2 garlic bulbs (coarsely chopped)

2-3 potatoes (chopped and seasoned with salt and pepper)

2 carrots (chopped and seasoned with salt and pepper)

1 onion (chopped)

200 grams blue cheese or blue Brie

salt / coarsely crushed pepper

soysauce (to taste)

2-4tbs. flour

Directions:

1. Put the chicken in a baking dish. Season with salt and pepper. Be generous.

2. Stuff the chicken’s cavity with the blue cheese and some cloves of garlic

3. Rub the garlic on the chicken and put remaining cloves around the pan.

4. Drizzle the olive oil around the chicken and pan

5. Bake chicken for 45 minutes at 180C. You can cover with foil if you’d like.

6. Turn chicken over and put around your chicken the potatoes, carrots, and onion. Bake for another 30-40 minutes or until nicely brown and golden.

7. Pull chicken out and collect drippings. Make a quick gravy by combining the drippings, some soy sauce, and flour. Stirring gravy till smooth at a medium heat.

Serve immediately. Carve chicken by slicing into the center so that the blue cheese melts out into everything else for a perfect medley.
