Spent my Sunday afternoon making a batch of tart+buttery lime muffins.

I haven’t baked in ages, so it was heavenly to have the smell of whipped butter, warm sugar, and lime zest wafting through our apartment on such a lazy day.  

I enjoyed my muffin with a cup of coffee and milk (no sugar) while I knitted a slouch hat for my friend, Lars. The entire experience was lovely. Wow, I feel like such a Frankie girl.

In case you’re inspired to make your own batch. This is the recipe I came up with.

Lime Muffins 

  • 3 cups flour (then substract 6 tablespoons)
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter
  • 2 1/2 cups sugar
  • 6 eggs (room temperature)
  • 3/4 cup fresh lime juice
  • 1 cup sour cream

Glaze:

  • 1 cup icing sugar
  • lime juice to taste

Instructions:

1. Set oven to 350°F/ 180°C

2. Whip butter and sugar until fluffy.

3. Add eggs one at a time till smooth.

4. Blend in lime juice, dry ingredients and sourcream.

5. Place two tablespoons of batter into cupcake papers and bake for around 30 minutes or until tops are lightly brown and a fork comes out clean.

5. You can choose to glaze your muffins and sprinkle a bit of lime zest. 

Enjoy with afternoon tea or coffee.
